Fajita Fiesta for One!
Ever had a fiesta in your mouth? Welcome to the ultimate fajita experience for one! Juicy, sizzling, and absolutely delicious. Easy to whip up and even easier to devour.
- Cooking Method: Stove-top
- Prep Time: 15 minutes
- Cook Time: 10 minutes
- Cuisine: Tex-Mex
Ingredients
- 1 small chicken breast (about 150g), thinly sliced
- 1/2 red bell pepper, julienned
- 1/2 green bell pepper, julienned
- 1/2 small onion, thinly sliced
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1/2 tsp chili powder
- 1/2 tsp ground cumin
- 1/4 tsp paprika
- Salt and pepper to taste
- 1 small tortilla
- Optional: sour cream, guacamole, and shredded cheese for topping
Cooking Instructions
- Heat the olive oil in a skillet over medium-high heat. Get ready for some sizzle!
- Add the minced garlic and cook for about 30 seconds until fragrant. Don’t let it burn; garlic has feelings too!
- Add the sliced chicken breast to the skillet. Cook for 3-4 minutes until no longer pink. Stir occasionally like you’re trying to impress someone at a dinner party.
- Toss in the bell peppers and onions. Cook for another 5 minutes until the veggies are tender but still vibrant. They’re fashionably late to dinner.
- Sprinkle the chili powder, ground cumin, paprika, salt, and pepper over the mixture. Stir to coat everything in spicy glory.
- Warm up the tortilla in a dry skillet or microwave. It deserves to be toasty!
- Serve the chicken and veggie mixture on the tortilla. Top with sour cream, guacamole, and shredded cheese if desired. Go wild!
Suggestions
- Not a fan of chicken? Swap it out for beef, shrimp, or even tofu. Fajitas aren’t picky!
- Fresh lime juice over the top can add a zest that says “I’m fancy and I know it.”
- Add some jalapeños if you want to turn up the heat. Because who doesn’t like to live on the edge?
- Sneak in some extra veggies like mushrooms or zucchini if you’re feeling extra healthy—or mischievous.
