Solo Slurp-Worthy Ramen

Ingredients
- 1 pack instant ramen noodles
- 2 cups water
- 1/2 cup chicken or veggie broth
- 1/2 cup mushrooms, sliced
- 1 green onion, finely sliced
- 1 garlic clove, minced
- 1 egg
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- Optional: Sriracha for a kick
- Optional: Chopped cilantro for garnish
Cooking Instructions
- In a small pot, bring 2 cups of water to a boil. Add the instant ramen noodles and cook for 3 minutes, or as instructed by the package.
- Meanwhile, heat a teaspoon of sesame oil in a small pan over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the sliced mushrooms to the pan with the garlic. Sauté for 3-4 minutes until mushrooms are tender and slightly browned.
- Back to the noodles! Once cooked, drain the water and set the noodles aside.
- In the same pot used for boiling, combine the chicken/veggie broth, soy sauce, and sautéed mushrooms. Bring to a simmer.
- Add the cooked noodles to the pot. Stir to combine and heat through for about 2 minutes.
- Crack the egg directly into the simmering broth. Let it cook for 1-2 minutes for a runny yolk, or longer if you prefer it fully cooked.
- Finally, pour your ramen into a bowl. Top with green onions, a drizzle of Sriracha, and cilantro if desired.
Suggestions
- Replace mushrooms with spinach or bok choy for a leafy twist.
- No broth? No problem! Use an extra noodle seasoning packet dissolved in the same amount of water.
