Ingredients

  • 1 pack instant ramen noodles
  • 2 cups water
  • 1/2 cup chicken or veggie broth
  • 1/2 cup mushrooms, sliced
  • 1 green onion, finely sliced
  • 1 garlic clove, minced
  • 1 egg
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Optional: Sriracha for a kick
  • Optional: Chopped cilantro for garnish

Cooking Instructions

  1. In a small pot, bring 2 cups of water to a boil. Add the instant ramen noodles and cook for 3 minutes, or as instructed by the package.
  2. Meanwhile, heat a teaspoon of sesame oil in a small pan over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the sliced mushrooms to the pan with the garlic. Sauté for 3-4 minutes until mushrooms are tender and slightly browned.
  4. Back to the noodles! Once cooked, drain the water and set the noodles aside.
  5. In the same pot used for boiling, combine the chicken/veggie broth, soy sauce, and sautéed mushrooms. Bring to a simmer.
  6. Add the cooked noodles to the pot. Stir to combine and heat through for about 2 minutes.
  7. Crack the egg directly into the simmering broth. Let it cook for 1-2 minutes for a runny yolk, or longer if you prefer it fully cooked.
  8. Finally, pour your ramen into a bowl. Top with green onions, a drizzle of Sriracha, and cilantro if desired.

Suggestions

  • Replace mushrooms with spinach or bok choy for a leafy twist.
  • No broth? No problem! Use an extra noodle seasoning packet dissolved in the same amount of water.
