Chicken Marsala is a classic Italian-American dish known for its rich, savory flavor. Tender chicken cutlets are simmered in a mouth-watering sauce made with Marsala wine and mushrooms. Perfect for impressing your guests or spicing up a weeknight dinner!

  • Cooking Method: Sautéing and Simmering
  • Prep Time: 10 minutes
  • Cook Time: 20 minutes
  • Cuisine Type: Italian-American

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 tablespoons olive oil
  • 3 tablespoons butter
  • 1 cup sliced mushrooms
  • 3/4 cup Marsala wine
  • 1/2 cup chicken broth
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley

Cooking Instructions

  • Pound chicken breasts to about 1/2 inch thickness. Pro tip: Best stress-relieving activity ever!
  • Mix flour, salt, and pepper in a shallow dish. Dredge the chicken lightly in the flour mixture. We’re dredging, not breading chicken armor!
  • Heat 2 tablespoons olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Once the butter is done making friends with oil, add the chicken.
  • Cook chicken for 3-4 minutes on each side until golden brown. Remove and set aside. Bonus: Now you can’t say you never went for the gold.
  • Add remaining olive oil and butter to the skillet. Toss in mushrooms and sauté for about 5 minutes until browned and slightly aromatic. Trust your nose!
  • Pour in Marsala wine and chicken broth, stirring to dissolve any golden bits stuck to the pan. They have dreams too, let them be part of this masterpiece.
  • Bring to a simmer, return chicken to the skillet, and reduce heat to medium. Let it cook for another 10 minutes, until slightly thickened and your kitchen smells like a fancy Italian bistro.
  • Stir in minced garlic and cook for another minute. Garlic is the grand finale you never knew you needed.
  • Garnish with chopped parsley before serving. Even the most stoic person will tear up a bit.

Suggestions

  • Alternative Ingredients: Substitute Marsala wine with Madeira wine for a slightly different taste, or use vegetable broth instead of chicken broth for a vegetarian twist (just swap out the chicken too).
  • Garnishing Options: Add a sprinkle of Parmesan cheese on top for extra indulgence. Because why not?
  • Cooking Tips: Want extra crispy chicken? Coat the chicken twice in the flour mixture. Use a meat thermometer for that perfect internal temp of 165°F.
