Brothy Chicken with Ginger and Bok Choy

- 1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces
- 4 cups (960ml) chicken broth
- 1 tbsp olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 tbsp fresh ginger, grated
- 1 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp rice vinegar
- 2 heads of bok choy, trimmed and halved
- Salt and pepper, to taste
- Optional: Sliced green onions and sesame seeds for garnish
Cooking Instructions
- Heat 1 tbsp of olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
- Add the minced garlic and grated ginger to the pot. Cook for another 2 minutes, until fragrant. Try not to drool!
- Add the chicken pieces to the pot. Cook, stirring occasionally, until the chicken is browned on all sides, approximately 5-7 minutes.
- Pour in the chicken broth, soy sauce, fish sauce, and rice vinegar. Bring to a boil.
- Reduce the heat to low and simmer for 15 minutes. Harmonica solo optional but recommended.
- Add the bok choy halves to the pot. Cook for an additional 5 minutes until the bok choy is tender but still bright green.
