Ingredients
- 1 tbsp olive oil
- 1/2 small onion, finely chopped
- 1/2 red bell pepper, chopped
- 1 garlic clove, minced
- 1/2 tsp ground cumin
- 1/2 tsp paprika
- 1/4 tsp ground cayenne pepper (optional)
- 1 cup canned crushed tomatoes
- Salt and pepper to taste
- 1 large egg
- Fresh parsley, chopped (for garnish)
- Crusty bread (for serving)
Cooking Instructions
- Place a skillet over medium heat and add 1 tbsp of olive oil.
- Sauté 1/2 finely chopped onion and 1/2 chopped red bell pepper until softened, about 5 minutes.
- Add minced garlic, 1/2 tsp ground cumin, 1/2 tsp paprika, and 1/4 tsp ground cayenne pepper. Stir for 1 minute.
- Pour in 1 cup crushed tomatoes. Stir and let the mixture simmer for 10 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Make a small well in the center of the sauce and crack the egg into it.
- Cover the skillet and let it simmer until the egg white is set but the yolk is still runny, about 5-7 minutes.
- Remove from heat, sprinkle with fresh parsley, and serve with crusty bread.
