- 1/2 cup Arborio rice
- 1/4 cup dry white wine
- 2 cups chicken or vegetable broth, warmed
- 6-8 medium prawns, peeled and deveined
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon unsalted butter
- Salt and pepper, to taste
- Fresh parsley, for garnish
- Lemon wedge, for serving
Cooking Instructions
- Heat olive oil in a saucepan over medium heat.
- Add the chopped shallot and sauté until translucent, about 2 minutes.
- Stir in the minced garlic and cook for another 30 seconds. Don’t let that garlic burn, or it gets cranky!
- Add the Arborio rice, stirring continuously until it looks slightly toasted, about 1 minute.
- Pour in the white wine and stir until the rice absorbs it. Cheers!
- Gradually add the warm broth, one ladle at a time, stirring frequently and allowing the rice to absorb each addition before adding more. This should take about 18 minutes. Mediocre workout, but worth it!
- When you ladle in the last of the broth, add the prawns. Cook until they turn pink and opaque, around 3-4 minutes. No pink prawns, no cry!
- Stir in the Parmesan cheese and butter until melted and creamy. Season with salt and pepper.
- Remove from heat and let it rest for a minute. Just like us after a big meal!
- Garnish with fresh parsley and a squeeze of lemon juice. Serve immediately.
