  • 1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces
  • 4 cups (960ml) chicken broth
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 tbsp fresh ginger, grated
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp rice vinegar
  • 2 heads of bok choy, trimmed and halved
  • Salt and pepper, to taste
  • Optional: Sliced green onions and sesame seeds for garnish

Cooking Instructions

  1. Heat 1 tbsp of olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  2. Add the minced garlic and grated ginger to the pot. Cook for another 2 minutes, until fragrant. Try not to drool!
  3. Add the chicken pieces to the pot. Cook, stirring occasionally, until the chicken is browned on all sides, approximately 5-7 minutes.
  4. Pour in the chicken broth, soy sauce, fish sauce, and rice vinegar. Bring to a boil.

  6. Add the bok choy halves to the pot. Cook for an additional 5 minutes until the bok choy is tender but still bright green.
