Ingredients
- 1/3 cup gluten-free all-purpose flour
- 1 tablespoon sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup milk (dairy or non-dairy)
- 1 egg
- 1 tablespoon melted butter or oil
- 1/2 teaspoon vanilla extract
Cooking Instructions
- In a bowl, whisk together the gluten-free flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine the milk, egg, melted butter (or oil), and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix!
- Heat a non-stick skillet over medium heat. Grease lightly if necessary.
- Pour about 1/4 cup of batter onto the skillet for each pancake.
- Cook the pancake for 2-3 minutes, or until bubbles form on the surface and the edges are set. Flip it like a pro!
- Cook for another 2 minutes or until golden brown.
- Remove from the skillet and serve hot.
Suggestions
- Can’t do dairy? Use almond milk or oat milk instead.
- Top with fresh berries, nuts, or a drizzle of maple syrup or honey.
- For extra fluffiness, separate the egg yolk from the white. Beat the white until stiff peaks form and fold it into the batter.
